BelGioioso Crescenza-Stracchino (kreh-SHEN-tsah – strah-KEE-noh)
Origin:  Lombardy and Romagna regions of Itlay. Was traditionally made only during the autumn and winter months as the cows descended from the pastures of these mountainous regions.  The physical exertion of the cows increased the butterfat content of the milk and the cooler temperatures were necessary for preserving the freshness of the cheese.  Today, BelGioioso is please to produce this delicacy in the United States.
Type:  Fresh Cheese made from whole pasteurized cow’s milk.
Original Form/Weight:  3.5-pound wheels  Available:  whole wheels or 8 oz. exact weight retail cuts.
Aging:  This is a fresh, rindless cheese and is not aged.  It has a 60-day shelf life.
Characteristics:  This fresh rindless cheese has a mild flavor with a touch of tartness that tantalizes and makes you want more.  Its soft texture and creamy consistency allows the cheese to spread and melt with ease.
Serving Suggestions:  Spread Crescenza-Stracchino on toasted bread, sprinkle with herbs and drizzle with olive oil.
Wrap bite-size pieces of Crescenza-Stracchino with prosciutto or any cured meat for a quick, delicious appetizer.
Melt Crescenza-Stracchino over pizza crust and top with arugula for a fresh, tasty pizza.

BelGioioso CreamyGorg(R) – This soft cheese, originally produced in the town of Gorgonzola, Italy, is now made in Wisconsin, using the authentic Italian recipe.  In keepig with tradition, it is aged 90 days, during which time the small holes in the rind allow air to penetrate, facilitating the growth of mold and creating an exceptionally full flavor and creamy texture.  Perfect for spreads or sauces; try it over pasta, beef chicken and vegetables.  CreamyGorg is delicious on its own spread on fresh bread.  Because of its savoury flavor, it is often used by vegetarians as a topping on pizza or salads.

BelGioioso American Grana(R) – Huge 70-pound wheels are created by Master Cheesemakers using the same authentic craftsmanship as is practiced in Italy.  This Premium Parmesan cheese is allowed to mature a minimum of 18 months in our special caves.  All natural ingredients and the distinctive aging process are what creates its deep, nutty flavor and granular texture.  This specially produced cheese is exclusive to BelGioioso.  The best way to serve American Grana is to chunk it on a platter with fresh grapes.

BelGioioso Burrata – This fresh cheese resembles a Fresh Mozzarella ball, but when split open, you will be delighted to discover a rich-tasting soft filling of fresh pieces of Mozzarella and heavy cream inside.  Slice Burrata and serve on leaves of endive for a simple and tasty appetizer.  Each ball is hand-formed, made to order and packaged in water for a 37-day shelf life.  Top salads, pizzas or pastas with this fresh, creamy cheese.
