Organic Valley has gone out to pasture, focusing on the food cows most love to eat: grass.

Presenting Grassmilk™ Raw Cheddar: unique, artisanal raw milk cheeses made from organic milk produced from cows that are 100% grass-fed. Grassmilk Raw Cheddar is a limited edition specialty cheese to celebrate Organic Valley’s 25th anniversary—25 years of cultivating goodness and commitment to Organic. Organic Valley Grassmilk Raw Cheddar is handcrafted and aged in small batches to retain the layers of Grassmilk’s flavor. It comes in eight-ounce wedges in two varieties: Organic Valley Grassmilk Raw Cheddar and Organic Valley Grassmilk Raw Sharp Cheddar.

Organic Valley Grassmilk Raw Cheddar is a mild, balanced cheddar with hints of pasture and butter. Aged a minimum of 60 days, it has a smooth texture and a slightly earthy taste. It’s a highly versatile cheese that is delicious served as a snack with Granny Smith apples and rustic crackers, and paired with cider or a light-bodied white wine.

Organic Valley Grassmilk Raw Sharp Cheddar is a stronger, more complex cheddar that is tangy with a buttery finish. Aged a minimum of 8 months, it has a more granular texture and stands up to horseradish, toasted nuts and mustard, and also great as a dessert cheese. The Raw Sharp Cheddar and goes well with stout or ale, as well as buttery chardonnay or even an apple brandy.

Organic Valley Grassmilk Raw Cheddar has an SRP of $8.39 and Raw Sharp Cheddar has an SRP of $8.89. Organic Valley Grassmilk Raw Cheddar Cheese will be available in natural food stores, food cooperatives, and major grocery chains in April 2013.

Organic Valley will also be sampling its award-winning Pasture Butter, a cultured and lightly salted butter with 84% percent butter fat. Its high fat content makes it perfect at the table or in recipes. Organic Valley Pasture Butter is seasonally produced in small batches at the height of pasture season, providing higher levels of vitamins, CLA (conjugated linoleic acid), and balanced omega-3 and omega-6 fats. Produced without antibiotics, or synthetic hormones and pesticides. Organic Valley Pasture Butter is available in 8-oz foil packages as well as 1-lb quarters in some stores.
